El Salvador Los Morales Natural Gesha

Thanks to our esteemed friends Lex Wenneker at Friedhats and Rodolfo Ruffatti Batlle at Productor Coffee, we have got our hands on a small amount of Gesha variety from Finca Los Morales! Los Morales, located in one of the greenest areas of El Salvador, in front of the Montecristo Cloud Forest in the region of Metapan, which is an up-and-coming coffee origin in El Salvador. This is where El Salvador meets Guatemala and Honduras. Owned by Milton Morales the farm is located in the Alotepeque mountain range at around 1800 masl. This coffee is a natural process. It has a round sweetness and juicy mouthfeel and it’s a fruit bowl of blackcurrant, peach, and lime.

Ground by 22 Click adjusted Comandante MKII
Water : 93˚
30 grams of coffee / 450 ml of water
60 ml for prewetting, 

1st pour of 100 ml in eccentric fashion, the nozzle is close as it gets to the brew-bed
2nd pour of 90 ml in central fashion, to promote fluid agitation and flatten the brew-bed
3rd and 4th pour of 100 ml in eccentric fashion
Rao spin as the pouring ends

Target brew time: 3:00 minutes
Poured from Flow restricted gooseneck kettle, w/ respect to avoid slurry heightening
